A Picnic In The Park With Sisters

Last Wednesday I took a trip up to Albany for the night to get some serious sister bonding in! It was a great night.  We decided to be a wee bit fancy and have a picnic in the park, with a cozy blanket, a bottle of Prosecco, and a huge spread of fruits, veggies, cheeses, meats, dips, and of course dessert! We were not messing around.

First thing first, we popped open that bottle of Prosecco and toasted to a fun evening with our classy paper cups!
Brit was pretty excited for the Prosecco, dontcha think? 
Luckily, the day could not have been any more perfect. The sun was shinning bright, with a slight breeze flowing by and partial shade provided by a nearby tree!
I must say, Kim did an amazing job and prepared a majority of the food, including the veggies, fruits, cheese, and meats! What a fantastic sis Brit and I have!
Once we settled in and snacked for a quick second, we kicked off our shoes and made ourselves at home while people passed by on bikes and their evening run!

This here is a little piece of heaven. It's a homemade red pepper relish made by one of our mother's friends! It had a perfect tangy flavor which we smeared on top of a little goat cheese and a cracker! Perfect!
 In our eagerness to get to the park, we forgot a few essential items, like plates and an actual knife to cut the sopressata. Luckily, our plastic knife was tough enough to saw away each piece. 
Once our Prosecco disappeared, we opened up the mason jar of Chardonnay that we quickly threw into our bag before jetting out the door!
Not to be biased, but my favorite snack of the night was my eggplant dip that I made earlier that afternoon. It was a puree of roasted eggplant, red pepper, onion and garlic with a little olive oil and salt! YUM!
Next in line was, of course, some Brie and prosciutto stacked on top of a cracker! Delicious in every bite!

Once our bellies were almost full, but had just a teeny bit of space left, I took out the Lemon Blueberry Tiramisu I prepared the day before!  
 Apologies for the lack of neatness in this photo, like I mentioned before, we were ill prepared and had no serving spoon! 
Once we packed up the left over food we lounged around and chatted for a bit.  I also had a mini photo shoot with Brit which made us all giggle!

Summer Dessert: Lemon Blueberry Tiramisu!

In preparation for an evening of sister bonding, girl talk, and lots of laughs, I decided to try out a new recipe I found on Pinterest, a Lemon Blueberry Tiramisu! Sounds amazing right?

Here's what you will need to treat yourself to this scrumptious summer dessert!  

1-2 lemons
3 3/4 cups blueberries
3/4 cup sugar
4 tablespoons water
17.6 ounces nonfat Greek yogurt
5 ounces ladyfingers
1 sprig mint, for garnish (optional)

To begin, grate 1 1/2 teaspoons  of lemon zest, and squeeze 1/4 cup of juice, then set aside.
Next, in a medium saucepan, combine 1 1/2 cups blueberries, 1/4 cup sugar, and 1 tablespoon water. Heat over medium heat for about 5 minutes or until blueberries soften and juices thicken.  Make sure you stir the pot every now and then!


 Once you have a beautifully vibrant blue saucy juice, transfer cooked berries into a medium bowl and stir in 1 1/2 cups fresh blueberries.
To prepare the lemon syrup combine 1/4 cup sugar and remaining 3 tablespoons of water in a small microwave-safe bowl and pop it in the microwave for a minute. Then, stir in 3 tablespoons lemon juice and 1 teaspoon lemon zest.

Now it's time to mix the yogurt, a 1/4 cup sugar,  1 tablespoon of lemon juice, and 1/2 teaspoon of lemon zest. 



*Make sure you taste your mixture to see if you like the sweetness and lemon combination.*




Finally, in an 8-inch square baking dish, arrange half of the ladyfingers, then brush with half of the lemon syrup. 


 Go ahead and spoon the blueberry mixture over the ladyfingers, then arrange the remaining ladyfingers over the blueberries and brush with the remaining lemon syrup.


Finally, you can spread the yogurt mixture on and cover your delicious dessert as you patiently refrigerate it overnight! 
Once it's set, add fresh blueberries and scoop out a heaping spoonful for you and your guests!

Hudson River Ride

Last week I met up with one of my best friends, Miss Courtney, and we took a ride on the Hudson River before we headed out to dinner! It was a beautiful night and the perfect time for a ride, so we hoped in her boyfriend's little dingy, Court mustered all her strength to start the motor, and we cruised on out of the marina!


We were both quite impressed with her muscle. 
 I'm not going to lie, at first I was certainly nervous about being in such a tiny boat going so fast, but I was wearing my nifty life jacket, and finally began enjoying the ride and amazing view! 
 During our ride we came across this cool historic ship. Unfortunately Court didn't know much about it, and I haven't had any luck finding info either.

 Mid way through our trip we had a few technical difficulties while out on the river.  The motor decided to be a pain in the you-know-what and stopped working for a few minutes...Forcing Court to flex for the camera again!
 He (yes, I did consider this motor a male) also had a little hissy fit and decided to get all smokey on us!
Cue my nerves from before, now caused by the possibility of being stranded out on the Hudson River!
Luckily, it didn't take us long before we were crusin' the Hudson once again!
